Gold Rum

Our Solera Aged Gold Rum combines production methods typical of Latin American, Jamaica, and beyond to create a new rum tasting experience. This versatile rum holds plenty of flavor and body to support the needs of any sipping connoisseur, while also lending a flavorful twist to classic rum cocktails. 

ABV — 42.5%

Aging — Solera system of Elijah Craig bourbon barrels began June 24, 2022

Color — Sparkling Gold, Hay

Aroma — Toasted sugar followed quickly by dried stone fruit and a lingering vanilla and charred almond

Taste — Dry full bodied rum, light sweetness and toasted up front followed by a taste of the barrel and leather earthiness 

Finish — Rich lasting dried fruit and toasted coconut

Cocktail Ideas — The Solera Aged Gold shines in any booze forward cocktail, and latches on to floral and spicy botanicals to make some really exciting flavor combinations

Silver Rum

Our Silver Rum blends a small amount of the Solera Aged Gold Rum with new-make to produce a grassy, vegetal, full body spirit. The robust honey agricole nose and funk finish adds complexity to classic cocktails and is also sure to inspire new experimental cocktail recipes.

ABV — 42.5%

Aging — Briefly rested

Color — Clear

Aroma — Grass and honey agricole followed by a hint of funk and leather

Taste — Robust body vegetal rum followed by a slight rich and sweet honey 

Finish — Lingering molasses funk 

Cocktail Ideas — The funk finish of the Silver allows it to cut through acid and sweetness in any cocktail, allowing a tasty cocktail that showcases the spirit

Founder’s Blend Rum

We’re gonna say it again for the folk in the back, rum categories are confusing. A blend means the bottle combines different rums —in this case a combination of our Solera Aged Gold Rum and Silver Rum. Merging these two spirits at a higher ABV (47.5%), offers a stellar sipping spirit that adds magic to your favorite rum cocktails.  The founders of CCC created this rum to celebrate our founding in 2023. It is reminiscent to the rum we were tasting early in our distillation and aging process. Shoutout to the Chicago Rum Club for their help making this bottle possible.

100% Molasses, 100% Pot Still, No Additives

ABV — 47.5%

Blend — Solera Aged Gold + Silver Rum

Color — Light Gold, Straw

Aroma — Toasted molasses, coconut, almond and fresh ripe tropical fruit

Taste — Dry, medium body, leather earthiness, and distinct molasses and ripened fruit zing 

Finish — Rich lingering minerality with the slightest heat

Dani’s Tavern Rum

The goal here is affordable rum that has flavor. Use this light body, grassy, vegetal rum in your well for all things rum — daiquiri, mojito, hurricane, cuba libre, rum punch, or whatever else you’re dreaming up these days. 100% Molasses, No Additives

ABV — 40%

Blend — 1/3 Pot Still CCC Silver Rum, 2/3 Column Still

Color — Clear

Aroma — Sweet grass and saline followed by a hint of lime citrus

Taste — Dry, light bodied rum with a hint of ripe red fruit

Finish — slight minerality with a final note of honey and vanilla

Silver Sazerac

  • .25 oz simple syrup

  • .25 oz maraschino liqueur

  • 3-4 dashes Cherry Bark Vanilla bitters

  • 3-4 dashes Black Walnut Bitters

  • 1-2 dashes absinthe

  • 2 oz CCC Silver Rum

Stir well on ice & serve up

Melipona

  • .5 oz - .75 oz rich honey syrup

  • Optional: .25 oz grapefruit oleo saccharum

  • .5 oz egg white

  • 1 oz grapefruit juice

  • 2 oz CCC Silver rum

Dry Shake. Shake with ice, strain, serve up, & garnish with Dashfire Creole bitters.

El Presidente

  • 1 Barspoon Grenadine

  • .25 oz Dry Curaçao

  • 1.5 oz Cocchi Americano

  • 2 oz CCC Gold Rum

Stir well on ice, strain & serve up

Paper Cane

  • 1 oz CCC Gold Rum

  • 1 oz Nonino or sweet amaro

  • 1oz Aperol

  • 1oz lemon juice

Shake with ice, strain & serve up

A few drinks more…

Caribeño

  • 2 oz CCC Silver Rum

  • 4 oz Coconut Water

  • Optional: .25 oz Simple Syrup (especially if coconut water is unsweetened)

Pour into glass with ice, stir, enjoy

Callejero

  • 1oz Brovo Jammy Vermouth

  • 1oz Bruto Americano (St. George)

  • 1.5oz CCC Gold Rum

Build in old fashioned glass on one large ice cube & stir
